We're all so familiar with this classic staple of our childhood, it's easy to think that they've just been around forever. So where did the popsicle come from?

The popsicle as we know it today was invented by a kid, which really shouldn't be a surprise. Back in 1905, a lad named Frank Epperson was making up some homemade soda for himself. He forgot all about it, and left the bottle out on the porch with the stir stick still in. The night was cold, and poor Frank had frozen soda in the morning. He gave it a try and loved it. He began to sell them around town, using the name popsicle as a combination of pop and icicle. They were a real hit.

His version of the popsicle originally came in 7 flavors, and the wooden stick inside was a coveted item as a craft supply for kids. Times were tough for Mr. Epperson in 1925, and he sold all the rights to the popsicle to the John Lowe Company, and its now owned by part of the Unilever company that continues to make them under the brand name Popsicle.

They expanded on the original fruit-flavored options, and added the Creamsicle to the line-up for a creamier treat. The kept going on the theme, and eventually released the chocolate Fudgsicle as well.

Today, these frozen treats can be found by many names around the world. In North America, they are called popsicles as well as ice pops or freezie pops. The Latino version is known as a paleta, and the British sometimes call them ice lollies. Some people call them freezies, but that term is more suitable for the long skinny plastic tubes of frozen juice that you eat from one end. These are also called Otter Pops, if you're interested.

Their popularity has grown so much that many people are looking for ways to experiment with more flavors and options, which is why having a recipe book of make-at-home popsicles is just a good idea.
